This “wild ferment” process is a high-wire act that rewards us with incredible complexity. You get deeper, unpredictable layers of flavour, think savoury spice, cider apple, and vibrant energy, that you simply don’t find in standard wines.
But “Natural” doesn’t mean messy. We still fine and filter our Solaris Natural to ensure it pours bright and clean. You get all the funky, complex character of a wild ferment, with the elegance of a premium English wine. It’s wine on the wild side, made proper.
We don’t take shortcuts. Every grape that goes into our wine is grown right here in our Nun Monkton soil. From the crisp Solaris to our signature Latimer, these are English grapes with a Yorkshire accent.
We don’t make wine to win trophies, we do it because we love it. But it’s always nice when the experts agree. We are proud to be multi-award winners, recognised not just for the quality of our wines, but for our commitment to family business values. It’s the official seal of approval on what we call “The Yorkshire Heart Way.”
