Brewing isn't a new idea in Nun Monkton. In fact, it’s in the village’s DNA. Historical records show that "Brewsters" were plying their trade here as far back as 1584.
Four centuries later, we are proud to be keeping that tradition alive. Established in 2011 and managed by our Head Brewer, Tim Spakouskas, the Yorkshire Heart Brewery has brought the craft back to Nun Monkton. Today, our 12-barrel microbrewery produces a range of award-winning beers that are full of flavour, character, and proper Yorkshire history.
The Brewing Process
Malt, Hops, and Heart. We combine the village’s brewing past with modern craft methods. Our philosophy is simple: use the best local ingredients and let them shine.
- The Water: Our secret ingredient. Sourced from our own borehole, it gives our beers a unique, clean profile that you can’t replicate elsewhere.
- The Malts: We use the finest malts from reputable Yorkshire suppliers, ensuring every pint supports local agriculture.
- The Team: Led by Tim, our team oversees every mash, boil, and fermentation right here on-site, just as the village brewsters did 400 years ago.
