When the label says Winemaker’s Choice, it means exactly that. This is the wine Gillian chose to put her name on, a blend of our Yorkshire-grown white grapes, matured in oak until the flavours are exactly where she wants them. The time in barrel does something you’ll notice immediately: it softens the acidity, deepens the texture, and creates a finish that stays with you long after the glass is empty. Serve it slightly chilled and give it a moment to open up.

Oak maturation changes white wine in ways that are easy to taste. Where our other whites lean toward crisp and fresh, Winemaker’s Choice goes rounder and richer. You’ll find vanilla and light toast from the barrel alongside ripe stone fruit, peach, a hint of apricot, with a smooth, medium-bodied texture underneath. The acidity is softer and more integrated than you’d expect from an unoaked white, which gives the wine a long, lingering finish. It’s a white that rewards a little attention.
The medium body and softer acidity make this a natural match for richer dishes. Creamy sauces are ideal — think chicken in a white wine cream sauce, a mushroom risotto, or pasta with a light béchamel. Smoked fish and smoked meats bring out the oak notes beautifully: try it alongside smoked salmon, smoked mackerel, or a smoked chicken salad. It also holds its own with baked sea bass or roasted cod with a buttery sauce. A white that earns its place at the dinner table.
Winemaker's Note
"I made this because I wanted something different to our other whites, more weight, more texture, a finish that stays with you. Oak maturation rounds out the acidity and adds a depth of flavour you simply can't get from stainless steel alone. It's a more patient process and the wine needs time to develop, but the result is worth it. When you're thinking about food pairings, go for richness, creamy sauces, smoked fish, anything with a bit of butter. It can handle it."
