Nelson Sauvin IPA
This is the ultimate expression of Yorkshire Heart: the vineyard and the brewery working in perfect harmony. This isn’t just an IPA; it’s a powerful 7% hybrid that defies categorization.
We brew this using Nelson Sauvin hops, then blend in 25 litres of fresh juice from our own Seyval Blanc grapes. To finish, we use sparkling wine yeast for a secondary fermentation. It’s potent, it’s sparkling, and it’s unlike anything else you’ll drink this year.

We wanted to create a beer that bridges the gap between the grain and the grape. The Nelson Sauvin hops bring that gooseberry punch, but the addition of real Seyval Blanc juice adds a layer of acidity and fruit that you just can’t fake. The sparkling wine yeast gives it a lively, champagne-like condition. Matured for 4 weeks in the tank, it’s smooth, dangerous, and delicious.

"This is a labour of love. Adding the grape juice and using the champagne yeast creates a second fermentation that transforms the beer. It takes a full month to mature in the tank, but the result is a 7% beer that drinks with the elegance of a fine wine."
