This is Solaris with a wild side. For this wine, we ditch the commercial yeast and let nature take the wheel. We allow the wild yeasts found naturally on the grape skins to kickstart the fermentation.
The result? A wine that is bursting with vibrant, complex energy that you just don’t get from a standard ferment. We then fine and filter it before bottling to ensure it pours bright and crystal clear. You get all the raw character of the vineyard, with a crisp, clean finish.

“Natural” here refers to the process, not the sediment. We rely on the indigenous yeasts from the vineyard to create the alcohol and flavour profile. This process takes a little more nerve, but it rewards us with a wine that has deeper, more unpredictable layers of flavour, think grapefruit, cider apple, and a savory depth. We finish it by fining and filtering, so you get a wine that looks elegant but tastes wild.
